Ingredients
For the marinade:
- 1 organic lemon, preferably organic
- 1 lamb leg (bone-in, short cut, approx. 5–6 lbs)
- 1 onion, cut into eighths
- 1 carrot, cut into large chunks
- 1 fennel bulb, cut into wedges
- 3 celery stalks, cut into large chunks (reserve fresh leaves)
- ¾ cup dried apricots, halved
- 2 dried bay leaves
- 1 tbsp green peppercorns in brine
- 2 tbsp sea salt
- 1 ¼ tbsp sugar
- ½ bunch fresh thyme, leaves only, finely chopped
- 4 cups white wine
- 2 cups water
Finalization:
- 1 carrot, large chunks
- 1 onion, cut into eighths
- 1 fennel bulb, cut into wedges
- 3 celery stalks, large chunks, plus leaves for garnish
- 2 tsp liquid honey
- ½ bunch fresh rosemary, needles only, finely chopped
- 2 tsp salt
- 2 tsp ground black pepper
- 10 radishes, cut into thin slices
Instructions
Marinating:
- Rinse the lemon under hot water, then carefully peel the zest into thin strips.
- Place the lamb leg and all marinating ingredients into a large bowl. Add wine and water to ensure the meat is fully submerged.
- Cover the bowl and marinate the lamb in the fridge for 12 hours. Flip the meat after 6 hours.
Finalization:
- 30 minutes before cooking, remove the lamb from the fridge and pat it dry with paper towels.
- Strain the vegetables through a sieve and reserve 2 cups of the marinade. Set aside.
- Close the Oval pan with EasyQuick. Heat on high until the temperature indicator reaches the roasting zone. Reduce to low heat and sear the lamb on all sides. Transfer to a plate.
- Sear both the marinated and freshly cut vegetables in the Oval pan, turning occasionally.
