Whether or not food sticks to an uncoated pan depends less on the amount of fat in the pan than it does on the temperature of the pan and when you turn it. Our Visiotherm makes the temperature inside the pot or pan visible. This way, you always know exactly when to increase, reduce, or switch off the heat.Be patient and wait before turning, especially when preparing roasted meat or poultry. Once a continuous golden crust has formed and is visible on the edge of the food, the crispy food can be easily removed from the frying surface.

Add salt to boiling water
To prevent pitting, always dissolve salt in boiling water rather than adding it to cold water
Use the right utensils
Avoid using metal utensils that can scratch the surface. Opt for wooden, silicone, or plastic utensils to prolong the lifespan of your cookware
ROASTING WITHOUT ADDED FAT
Early soaking is key to success
When roasting food without added fat, cooking residues will stick to the base. To make them easy to remove, it is advisable to place the still-warm pan under cold running water immediately after roasting.
Always make sure that the Audiotherm has been removed before cleaning with water.
Instead of rinsing the pan under running water immediately, use the flavorful bits left in the pan to create delicious sauces. Simply add a splash of broth, wine, or vinegar while the pan is still warm and scrape up the browned bits to enhance your dish.
FRYING WITH ADDED FAT OR DEEP-FRYING
Cleaning a greasy pan
After frying with added fat or deep-frying, make sure to let the pan cool down properly before taking any further actions
Let cool down
Allow the pan to cool down properly before cleaning to prevent warping due to sudden temperature changes as well as unwanted splashes when hot fat comes into contact with water.
Remove excess fat or oil
Use a kitchen paper towel and wipe the inside of the pan to remove remaining grease. After deep-frying, carefully pour out the used oil into a heatproof container for proper disposal or further reuse
Basic cleaning
Fill the pan with hot water and let it stand for a few minutes to dissolve remaining grease. Then, use dish soap and a sponge or soft brush to clean the pan thoroughly, including edges and corners
Post cleaning care
Dry all stainless steel products immediately with a soft cloth to prevent water spots. Store your cooking system in a dry place, preferably with the lid slightly open for airflow

Proper drying
After the wash cycle, the pots should be removed and dried as quickly as possible to avoid water stains or limescale deposits. Alternatively, you can wipe the pots dry briefly in the dishwasher after the wash cycle.

OVERHEATING
Discoloration and stubborn residues
Discoloration on AMC stainless steel cookware can occur due to several reasons, including overheating. If the cookware is heated too high without any contents, it can develop a bluish or rainbow-like discoloration - don’t worry, this is not damage but a heat tint that can be easily removed
Prevention
To avoid any discoloration caused by overheating, always use the audiotherm to control the temperature.

HARD WATER AND STARCHY FOOD
White stains and deposits
White spots on AMC stainless steel cookware are usually caused by mineral deposits from hard water or starchy food. These spots appear when water evaporates and leaves behind calcium and magnesium residues. They are harmless but can make the cookware look dull.
Prevention
After cooking pour some water into the pot. Avoid using the pot to store salty food.

HARD WATER, IRON CONTAMINATON AND IMPROPER DRYING
Flash rust
Flash rust on AMC stainless steel cookware occurs when small iron particles from external sources come into contact with moisture on the surface. These particles oxidize quickly, creating tiny orange or brown rust spots
Prevention
Always dry cookware immediately after washing and store it in a dry place. Avoid using steel wool or abrasive metal sponges

CORROSION
Pitting and black spots
Pitting corrosion and black spots on AMC stainless steel cookware are usually caused by reactions between the metal surface and certain substances, leading to small, permanent marks. The cause is typically the formation of halogen salts, such as table salt combined with water and oxygen. These salts can locally damage the passive layer, leading to corrosion points, which appear as small holes or flaking on the surface
Prevention
Always add cooking salt to boiling water and stir thoroughly.

Practical cleaning tips
Stainless steel care products
- Apply a small amount of the paste to a damp cloth or sponge.
- Gently rub the discolored area in circular motions.
- Rinse well and dry immediately
Vinegar water
- Mix 1 part vinegar with 3 parts water and bring it to a boil in the affected pot
- Let it cool, then wash with warm, soapy water and a soft sponge
- Rinse and dry thoroughly.
Lemon Juice
- Squeeze some lemon juice onto a soft cloth or sponge
- Rub the affected area
Baking Soda
- Mix baking soda with water to form a paste
- Apply the paste to the discoloration, and gently scrub with a soft sponge
