How do I get restaurant-style grill marks indoors?

Three steps: (1) preheat the dry Grill Pan until the Visiotherm reaches the high-heat zone (or wait for the Audiotherm signal); (2) press the food firmly onto the ridges and don't move it for 90 seconds; (3) rotate 90° once for cross-hatch marks. The high-conductivity stainless steel and tall ridges are what produce the deep, dry sear.

Will the Grill Pan smoke up my kitchen?

Less than you'd expect, because A by AMC's no-fat technique doesn't rely on smoking oil. The Visiotherm prevents you from overheating, and food searing in its own juices produces vapour, not the heavy smoke you get from oil-based grilling. A range hood is still recommended.

What's the difference between the Frying Pan and the Grill Pan?

The Frying Pan has a flat surface — designed for full-contact searing, sautéing and frying (steaks, vegetables, eggs, pancakes). The Grill Pan has raised ridges — designed for high-heat grilling with grill marks and to lift food above its rendered fat. Most kitchens benefit from owning both.

Is the Oval Pan worth it for entertaining?

Are the pans induction- and oven-safe?

All A by AMC pans work on every stovetop (gas, electric, ceramic, induction) and are fully ovenproof up to 900°F. Start a sear stovetop, finish in the oven without changing pans.
