  • 1 onion, diced
  • 1 garlic clove, minced
  • 1 small fresh red chili pepper, minced
  • 0.75 lb green beans, cut into bite-sized pieces
  • 1 red bell pepper, cut into short strips
  • ½ yellow bell pepper, cut into short strips
  • 1 pinch saffron threads
  • 1 cup Bomba or Calasparra rice
  • 1 cup frozen green peas
  • 2 cups vegetable broth
  • 2 tomatoes, diced
  • 2 tbs lemon juice
  • 2 tbs olive oil
  • Salt, pepper


Instructions

  2. Add chili pepper, green beans, bell peppers, saffron, rice, green peas, and vegetable broth. Combine well. Turn to high heat until the temperature indicator reaches the vegetable zone, reduce to low heat, and cook for about 15 minutes in this zone.
  3. Add tomatoes and stir well. Season the paella with lemon juice, olive oil, salt, and pepper to taste, then serve.
