Serves: 4
Ingredients
- 1 eggplant, thinly sliced
- Salt, pepper
- 2 ½ cups canned tomato sauce
- 2 garlic cloves, minced
- 1 tsp dried oregano
- ½ tsp ground hot paprika powder
- 10 oz penne rigate
- 1 ¼ cups vegetable broth
- 1 ¼ cups shredded cheese
Instructions
- Preheat oven to 420°F (Broil).
- Layer half the tomato slices in the rondeau pan, followed by half the eggplant. Season with salt and pepper.
- Mix tomato sauce, garlic, oregano, paprika, salt, and pepper. Pour half over the eggplant.
- Add pasta and broth.
- Top with remaining tomato, eggplant, and sauce. Finish with cheese.
- Cook on stovetop: heat until the Visiotherm indicator reaches the vegetable zone, then reduce to low. Cook 12 minutes.
- Transfer to oven uncovered. Broil for 10 minutes until golden.
