Recipe: One-Pan Chicken Meal

You’ll need: AbyAMC Frying Pan
Serves 4 

Ingredients

  • 4 chicken breasts
  • Organic grains of paradise seasoning
  • Organic lemon pepper
  • Organic seaweed salt (or sea salt)
  • 2 cups cauliflower rice
  • 4 tbsp avocado or macadamia oil
  • 4 cups frozen mixed vegetables
  • 6 tbsp water

Instructions

  1. Remove chicken breasts from the fridge about 30 minutes before cooking. Pat dry.
  2. Heat pan on high until the temperature indicator reaches the roasting zone. Reduce to low and place chicken flat-side down. Close the lid and sear until the turning point is reached.
  3. Flip chicken, season to taste, close the lid, and sear until the turning point is reached again. Remove chicken from the pan.
  4. Mix cauliflower rice with oil and sauté in the pan over medium heat for 1 minute. Add frozen vegetables and water. Place chicken breasts on top and close lid.
  5. Turn heat to high until the indicator reaches the vegetable zone. Reduce to low and cook for 12 minutes, until the chicken reaches 165°F.
