Ingredients
- 2 garlic cloves, minced
- 2 small red chili peppers, halved, deseeded, and cut into strips
- 4 tbsp olive oil
- 2 tbsp wine vinegar
- 1¼ tbsp liquid honey
- 1¼ tbsp dried Herbes de Provence
- 1¼ tsp ground cumin
- 3–4 raw beetroots, cut into thin wedges
- 2 parsnips, diced
Instructions
- Place the garlic, chili peppers, olive oil, vinegar, honey, Herbes de Provence, and cumin into a salad bowl. Mix well to make the dressing and set aside.
- Place the beetroot and parsnips into the Softiera. Add water to the pot and place the Softiera inside. Close with the EasyQuick using the 9.5” gasket.
- Turn to high heat until the temperature indicator reaches the steaming zone. Reduce to low heat and cook for approximately 8 minutes in this zone.
- Remove the EasyQuick once steaming is complete. Take out the Softiera and allow the vegetables to cool slightly. Add the vegetables to the salad bowl with the dressing, mix well, and serve.
