Ingredients
Wings
- 3 lbs chicken wings
- Âź cup all-purpose flour
- 4 tbsp corn starch
- 1 tsp baking powder
- 1 tsp smoked paprika powder
- ½ tsp cayenne pepper
- ½ tsp onion powder
- ½ tsp salt
- 4 cups frying oil (e.g. peanut oil)
Hot Sauce
- 4 tbsp unsalted butter
- ½ cup Frankâs Louisiana Hot Sauce
- 1 tbsp Tabasco (or other hot sauce, optional)
- 1 tbsp dark brown sugar
- 1 tbsp apple cider vinegar
Instructions
- Remove the chicken from the fridge about 30 minutes before cooking. Pat dry with paper towels and place in a large mixing bowl.
- For the hot sauce: melt butter in a pot over low heat. Whisk in hot sauce(s), brown sugar, and vinegar. Once combined, remove from heat and set aside in a bowl.
- Preheat the oven to 300°F and line a baking sheet with paper towels (to keep fried wings warm).
- Mix together the dry ingredients, pour over wings, and toss to coat evenly.
- Add frying oil to the pan. Turn to high heat until the temperature indicator reaches the roasting zone, reduce to medium heat, and add half of the chicken wings. Deep-fry until golden brown and crisp (about 10 minutes), flipping halfway through.
- Place fried wings onto a baking sheet and repeat with the remaining chicken wings.
- Pour the sauce mixture into a large bowl, add the fried wings, and toss until evenly coated.
- Serve with blue cheese dressing and carrot and celery sticks.
ChiliÂ

- 1 lb ground beef
- 1 red onion, diced
- 1 ½ garlic cloves, minced
- 1 carrot, diced
- 1 tsp ground hot paprika powder
- 1 tsp ground cumin

- ½ tsp chipotle chili powder
- 1 ½ tsp salt and ground pepper
- 1 can kidney beans
- 1 cup beef broth
- ½ cup beer
- 1 can tomato sauce
- 1 tbsp fresh cilantro, roughly chopped
- ½ cup sour cream
Instructions
- Turn to high heat until the temperature indicator reaches the roasting zone. Reduce to low heat and add ground meat in batches. Sear while stirring until it crumbles.
- Add onions, garlic, and carrots. SautĂŠ while stirring. Add all spices, then season with salt and pepper to taste.
- Add beans, broth, beer, and tomato sauce. Mix well. Close with EasyQuick using the 9.5â gasket.
- Turn to high heat until the temperature indicator reaches the steaming zone. Reduce to low heat and steam for 15 minutes in this zone.
- Remove EasyQuick once the steaming is finished. Stir the chili well and season to taste.
- Serve with sour cream and cilantro.
Shrimp Tacos with Southwest Salsa

Ingredients
- 1.5 lbs fresh raw small shrimp, peeled and deveined
- 3 tbsp Cajun spice mix
- Âź cup small diced tart apple (e.g. Granny Smith)
- Âź cup small diced mango
- Âź cup small diced red bell pepper
- Âź cup small diced red onion
- Âź cup canned sweet corn kernels
- Âź cup small diced tomatoes
- 1 jalapeĂąo, minced
- Âź cup chopped fresh cilantro, plus extra leaves to garnish
- 1 tsp salt
- 1 tsp raw cane sugar
- 2 tbsp lime juice
- 6 corn tortillas, warmed

Instructions

- Turn to high heat until the temperature indicator reaches the roasting zone, reduce to low heat and add shrimp. Close with the lid and sear until the turning point is reached. Flip shrimp, turn off heat, and let rest for approx. 4 minutes.
- Combine all remaining ingredients with lime juice.
- Serve warm tortillas with shrimp, salsa, and avocado slices. Garnish with cilantro.
Pro Tip: Mango can be replaced with fresh peaches.
