Serves: 4

Ingredients

  • 4 turkey or chicken breast fillets, cut into schnitzel-sized portions (approx. 4-5 oz each)
  • 4 tbsp peanut butter
  • 2 ½ cups celery stalks and leaves, finely sliced
  • 1 onion, diced
  • 4 carrots, halved lengthwise and cut into slices
  • 1 mango - one half cut into four thin slices, the rest diced
  • Salt, to taste
  • Ground cayenne pepper, to taste
  • ½ cup chicken broth
  • ž cup unsweetened coconut milk
  • ⅓ tbsp cornstarch (optional, for thickening)


Instructions

  1. Remove the meat from the fridge about 30 minutes before cooking. Pat dry with a paper towel. If needed, cover with cling film and gently pound to flatten.
  2. Season with salt and cayenne pepper. Spread 1 tbsp peanut butter on each schnitzel, top with a slice of mango and a few celery leaves. Roll up and secure with toothpicks.
